Chilli Pickles

Recipe for Chilli Pickles

1 kg fresh chillies

3 cups white vinegar

1½ cups white sugar

½ teaspoon salt

Wash the chillies, dry with a paper towel and remove the stalks. Slice the chillies into small chunks and set aside.

Heat up the white vinegar, sugar and salt in a pot. Keep stirring until the sugar has melted. Bring the vinegar solution to a boil. Add in the chillies and let it boil quickly for 30 seconds.  Turn off heat and let the chilli mixture cool before transferring them to a bottle. Keep the chilli pickles fresh by storing them in the fridge.
